The grapes are harvested manually and transported in crates as quickly as possible for processing at the winery.

This is a sparkling wine obtained using the Charmat method (a method of two controlled fermentations in autoclaves) from base wines made from Riesling and Pinot Noir grape varieties.

The whole grapes are pressed, followed by a brief cold maceration in a controlled atmosphere.

The must was decanted using cold treatment and then clarified. Fermentation took place in pressure tanks at low temperatures between 12 and 16°C. Secondary foam production was carried out in autoclaves and the wine was made using the long Charmat method, remaining on its lees for 7 months.
